Are East Asian soups supposed to taste this bland?
I didn’t follow one specific recipe but combined different ones I saw on Pinterest

It doesn’t taste BAD. There’s not a bad small or taste, it just tastes watery and plain. Is this how it’s supposed to be?

Speaking anecdotally (as an Asian): my mum never makes soup without meat. She did one time because my dad had to go on a diet and even he couldn't eat it.
In fact, they even laugh at White vegetarians for eating noodle soup, getting it with no meat assuming it's vegeterian, because the soup itself is a meat stock.

I can only think of the Japanese who have miso and dashi.

Apart from what others have said about stock and seasonings, you may have been missing the right amount of salt. Broth like that tastes of absolutely nothing until you reach a certain salt level.
Start off by frying a shallot sliced in half face down, slices of garlic, ginger, and carrot in hot oil until the shallot face is very brown, then add the water. That gives a passable quick base for a vegetable soup.

I'm making proper miso for the first time today or tomorrow. Got all the ingredients etc. I'll report back with my recipe if it doesn't taste like shit. One thing I'll mention though is you'll need to make a trip to the asian grocer to get the dried kelp, bonito flakes and dried mushrooms for the stock. Oh and the miso paste too. Not much to it other than steeping the first three things to make a base, then adding paste. Stir. then when ready, add silken tofu, scallion and enoki, wakame or whatever you feel like.
