Don't overcook it (although be careful with doneness with pacific varieties).
Use butter.

Eat them whe they are in season, not the fish almost falling apart after playing.

Don't listen to this retard. Use some kind of glaze with whatever random asian sauces you have(soy sauce, ginger, sugar ect) and throw under the broiler for 5 minutes. If you are lucky enough to have a grill you can use that also. Or a pan with butter. Broiler is probably the easiest, it's hard to fuck up. Fish is best cooked hot and fast. Getting high quality salmon also makes a huge difference, wild caught sockeye is a million times better than shitty farm raised salmon

Pretty much this. Scale it, remove the pin-bones, freeze at -35, or -10 for a week, then thaw and fry the skin quickly and enjoy your slightly warm flesh.

You don't taste cold things as well nor hot things. You taste things slightly above body temperature best. This is not taking into account oxygenation or extraction of different kinds of oils.

I never ate cooked salmon that wasn't bad to mediocre.
The fish is too fat and cooks too quickly - you can't cook it low and slow wagyu-style to render the fat without overcooking it to produce something nice and juicy.
I was told multiple times that I just "didn't try the good one" but somehow no one has managed to deliver "the good one" either.
Another thing is that rendered fish fat isn't particularly appetizing.

IMO the best uses for salmon do not involve heating it up.
Salmon nigiri are great.
Cured salmon can be great.
Or more specifically quick dry-cured salmon is amazing. You can eat it as is, or throw it on a slice of bread with some butter. It's great.
Just grab a piece of raw salmon, rub it with salt and sugar mix (can go as high as 50/50 salt to sugar but I recommend doing something like 80/20 first), pack it tightly into a sealed container so it's a bit under pressure, and let it sit in the back of your fridge for three days. That's all it takes. After that you can just take it out wherever, slice out the amount you need and put it back. Very easy and crazy delicious.

But to taste really good you need to find a good quality wild caught one with a nice deep red color.
Want even better than that? Get smoked salmon and sear it. Some of the best meat ive ever tasted.

We make crispy skin salmon with roast or mashed potatoes, or sometimes Tuscan salmon with cream and spinach and all that. Most important thing to do is use enough salt. You can melt a lot of salt into one of those filets
