I keep around 3 days worth of homemade stew and bread in the freezer at all times, just in case. Still hearty and tasty even after a couple months and it's easy to replenish the stock once I'm feeling a bit better.

Slow cooker/rice cooker butter chicken.
You need to cut up one onion and some garlic, but that's it for prep. No dirty pots or pans to clean up either. Throw it all in the rice cooker, slow cook for a few hours and you have tasty food for the next few days. Reheats great in a microwave. If that's still too much, you can replace having to cut the onion with dehydrated onion or onion oil and the garlic with garlic powder.
Other foods I make when I am really unmotivated:
Toasted bread (preferably a darker bread, but white bread works too) with canned herring in tomato sauce and some hot sauce is surprisingly tasty.
Canned chickpeas make for a quick msabbaha to be eaten with bread.
You can buy powdered falafel - just add boiling water, let soak for a few minutes and fry in oil or a pan.
Or slice and fry some pre-marinaded meats in a pan, then add a can of green beans, as well as some honey and balsamic vinegar or soy sauce for a quick glaze/sauce.
Another favorite of mine are what I call "dumblings" - put flour in a bowl, make a small hole in the middle. Put warm water, dry yeast and a little sugar in there to activate the yeast, then add a pinch of salt and mix dough for a few seconds just until there's no dry flour anymore. Then cover and put in the fridge. When making a canned or powdered soup, take some of the hydrated dough, pull of small pieces and throw them in there as it cooks. The dough gets the flavor of the soup, but gives the mouth feel of dumplings.
Microwaved potatoes are also a great depression food, just take potatoes, put them in the microwave at high for 8 minutes and enjoy. They will look like ball sacks but taste like oven potatoes.
In general canned or frozen ingredients rather than canned or frozen meals can make cooking much faster and easier and are acceptable shortcuts when feeling down imo.
Ideally you want to eat healthy which will help with the depression too, but I get you can't always do that.

You literally throw the ingredients into the rice cooker, including whole chicken legs, press "slow cook" and return 2 hours later to pull out the bones (which is easy after the slow cook) and mix in coconut milk and yogurt. It's not authentic, but really fucking close in taste for a combined time spent preparing and cleaning up of under 10 minutes and then you have enough food for half a week minimum. It's super lazy surprisingly.

With a few important changes:
Rather than chicken breasts, use chicken legs. Dark meat tastes better and after slow cooking removing bones is trivial anyways. Cheaper too. Breasts work if you want lowest effort though.
The minced ginger can easily be pre minced ginger from a glass, that's what I use.
Skip the cauliflower. Too much work. If you do want it anyways, you can use frozen ones that are cleaned and portioned already.
I use normal Greek yogurt rather than nonfat, no idea if that matters much.
Skip the toasting of the spices part. It's more effort and cleanup for marginal taste gains. Just throw it all in the slow cooker/rice cooker as is. That includes raw onion, garlic etc.
This probably only works if your rice cooker has a slow cooker function. The basic rice coolers with a bimetallic strip will probably get too hot for slow cooking.
The coconut cream and yogurt have to be added after the slow cooker is done, or it'll separate.
It works really well, I was super surprised myself.

I guess you could emulate a slow cooker with a pot on low heat, but that means you'd have to pay a little more attention to it, which somewhat defeats the purpose. The nice thing about slow cookers is that you precisely don't need to care as much about them.

If you want to make authentic restaurant style butter chicken, check out misty Ricardo on YouTube, he's as authentic as you can get. Issue is as a result you need specialty ingredients and a lot of labor - the slow cooker version is a decent-ish approximation for a fraction of the effort.

The technical differences like how they are made you can look up yourself but generally cottage cheese is low fat, somewhat grainy and slightly salty. Very low calorie though for a cheese.
Plain yogurt is the default product. Pretty boring if you buy the store bought ones, and often on the lower end of fat content.
Greek yogurt is higher in fat which means it's substantially creamier than normal yogurt (unless that has thickeners added) and has a much stronger "fermented" taste. If you've ever had frozen yogurt, aside from the sweetness the aroma that that has is closest to Greek yogurt imo. It's my favorite go-to yogurt because it actually has some flavor and character, but the higher fat also means more calories if that bothers you.
So cottage cheese is grainy and salty, plain yogurt is a bit boring and greek yogurt has a strong aroma but higher fat content.

I use mine a lot, but it's worth examining if you'll actually use it, I know a few people who have one but use it too rarely to justify leaving it on the counter in my opinion.
I got a yum Asia "panda mini" rice cooker, which is sort of trying to be a budget alternative to the zojirushi ones. It can't quite compete with those, but it also costs like a third, so I'm not complaining. From my understanding yum Asia is trying to primarily cater to the European market though, so no idea if those are worth it in the US. After brexit I'm not even sure if they are even worth it in the EU anymore (it's a British brand I think), so do your own research.
