The problem is that both options the OP listed are proprietary, and you wouldn't be able to run them on consumer hardware even if they were open. You will need local models for that, and the decent ones still need beefy hardware that you can't fit inside a plush. I guess you could only put a speaker and microphone inside the plush and let a computer do the work remotely, but that would lose its charm, in my opinion.
