I know this setup could be simplified, so I'm sure this guy is just doing it like this because he can. Based for using toggle switches. I like it.

I don't believe this is actually your bike and you just found this on the internet, but whoever's bike this is, they have some form of mental illness. not sure what, but something.

I've always liked the idea of some sort of radar/camera setup in the handlebars because I can't quite look back while staying stable and it'd just be cooler

Realistically though what is actually useful in a bike/ebike dashboard?

Accessory devices
Dashcam
lighting control
Heated grip control
USB power outlet control
Rearview camera, mirrors, panoramic vision display

Navigation
Compass
maps like Google maps, fatmap, waze, gps

Weather
Weather outlook display (with aqi too maybe)?
Barometer
Thermometer

System
Electrical like power consumption, remaining battery or range, amps being drawn, volts available
Tire pressure sensors
Would be neat to have switches to change the max power it draws probably by modulating voltage, e.g. 250W baby/euro mode, 750W US bike lane, public street mode, >1 kW offroad/private property mode.
How much power it can be generating by going downhill or drawing from solar.

Pacing
Clock,
pace meter
Speedometer

Physical sensors
dynamometer
G-force, accelerometer tracking
Inclinometer

Countermeasures
Radar detector
Radar detector detector detector
Smoke/chaff/flares/oil slick/caltrops/cash (so people run in the street after it) deployment
EW jamming to try to stop that drone or loitering munition from killing you

Did I miss anything?

it's easier to look back one handed. It naturally causes you to turn a little so you have to learn to counter steer and pedal to go straight.
