Does windows 10 make a hash number out of every individual file you have on your HDD and does it keep gradually sending these hashes to Microsoft when you are on internet and not doing anything in particular so Windows deicdes its a perfect time to send them?

Yes, Windows 10 and 11 both collect all of your files and submits them to the cloud for "virus scanning". It also spies on everything done through Edge, Chrome and possibly even Firefox. Every window, click, search, file opened is also tracked. None of it is actually "anonymous".
