When you only use like four ingredients, they need to be of the highest quality. If your rice, seaweed, fish, or vegetable/sauce/seeds or whatever is subpar, it'll show. Japs are great at taking a minimalist concept like sushi and elevating it through sheer autism. For a western example, see dishes like carpaccio: just raw meat with some arugula, cheese, and a vinagrette create something that's more than the sum of its parts, but every part needs to be top tier quality or it all falls apart.

Sushi is one of the easiest things in the world to make and it's so much cheaper if you make it yourself or go to a poke place. Its anything but usual, there are pretty much no other cuisines that use raw meat.

Also I dare you to try and make your own sushi. I'm not going to pretend its some master skill and you must wash rice for 10 years or any shit like that but it does take some skill and know how to do well. Sushi incorporates many different fish and if you don't butcher the fish properly the fish will quickly become chewy and muscly.

Sushi from a place that specializes in sushi is going to most likely be better quality, but at a higher price. You'll still be able to get your fried roll and fish eggs, and it'll be better than the buffet, but whether it's worth the extra cost is up to you.
Now if you go to Japan to find "real" sushi, you'll find that it's a different animal over there than in the States because we Americans use ingredients that would be unheard of in Japan. I'm not sure about an everyday eatery but their high-end sushi restaurants take shit very seriously and can be very expensive.

Look at Jiro dreams of sushi, he uses a little paint brush to brush some concoction on the fish. I was eating sushi in the late 80's. There's nothing significant about the early 2000's, other than it being a terrible time for basically everything.

Because its an "exotic" oriental food that is, and remains, palatable and fashionable, to upper-middle class Americans.
a. It happened to be in the right country (i.e not a warzone or communist in the cold war)
b. had a sizable diaspora of middle and upper-middle class people who were at least tolerated in the west and were not seen as filthy (see Indians)
c. was accepted into the palette of many Americans for its non-offensive flavors

all of these factors made Sushi, along with other Japanese foods the only real oriental cuisine to make the jump. Of course in places like Houston Vietnamese food is common because of places like Little Saigon and whatnot and Cantonese food in Chinatown in NY but the Vietnamese preferred to adopt the west and the Chinese have been seen as the "enemy" for about 20 years now.
