Does it look like this No? then you failed
>>
looks like your eggs are overdone for carbonara, so i guess purists would say you couldn't say it is.
would eat it anyway, looks good.
>>
>>20414009
keep the egg liquid, it's a must. if you fail to do so and notice early, you add pasta water and stir to mitigate the damage. it needs to be creamy.
>>
>>20414016
i know this is bait, but still going to reply to it because it's so bad.

>using 2 kinds of pasta with different cooking times, ronis will be al dente, farfalle will be hard/uncooked
>peas
kys

at least the egg is less solidified as op's one
>>
>>20414021
Carbonara was solid, cooked-through eggs until the 90s
>>
>>20414105
>the concept of starting with the pasta with the longest cooking time is alien to me

are these egg bits? that's bad.

I used the still hot liquid from the bacon to "cook" and mix the egg sauce.

interesting, would you have any source on this?

Apart from being alive in the 80s and 90s and remembering how people used to make it, Vincenzo's Plate in just about every carbonara mentions it
The 90s were when the creamy style started taking over
There was even a style of carbonara where you boiled the spaghetti and put it in a buttered pie pan, sprinkled sauteed ham/bacon/guanciale over the top, tempered the eggs, mixed in the cheese and pepper, pour that over the whole thing, and baked it like a casserole
Then you'd slice it like a pie, served hot or cold
God the days when I'd open up my lunchbox and see a slice of that shit, I hated it
Hindsight, my dad loved me and made sure I ate well, took many years for me to understand that

The ones with either sun dried tomatoes or mushrooms look best

i can enjoy a carbonara every once in a while but damn it is bland. honestly it needs some veggies or something in it, the only reason there isn't any is because those poor fucks in the 40's couldn't afford it.
>>
you made bacon and scrambled eggs with spaghetti
>>
>>20416213
It's far from bland with egg, pork and cheese

You're either lying or your brain isn't functional
>>
>>20416213
Sorry to break it to you but I think you had shitty carbonara because a proper carbonara is anything but bland.
>>
>>20416219
>>20416227
it's literally colourless

you can't honestly believe it's a perfected dish when it's missing 80% of all basic nutrients.

>>20416213
It's italian mac n cheese. Using very high-quality cheese and real guancialle makes a big difference.

>Pancetta is an acceptable replacement for guanciale, but not bacon
I disagree. Using bacon makes a different dish which purists might refuse to call carbonara, but it's delicious and worthy of being eaten. This is especially true if you can get your hands on some good local (or relatively local) bacon; cooking with local ingredients is always cool.
>>
>>20414009
You cook everything in olive oil. The three eggs after it is out of the bowl. Pasta should still be hot enough to melt cheese still.
>>
>>20414324
how do baby otters taste?
>>
what's carbonara supposed to taste like anyway? the only italian restaurant that makes proper carbonara around me is fucking expensive (other restaurants have carbonara on their menu, but it's fucking alfredo sauce). I'd do it myself, but my range sucks when it comes low-medium temps. it's one of those that heat up to the max and shut down. it's fine to make steak when i put it on high.
>>
just skip the eggs and use cream
tastes much better and is easier to make

You forgot to add the cream. Also you should try adding chicken, Italians love that.
>>
>>20416235
Meat and dairy give you all of the nutrients you need retard. Vegetables are high in some nutrients compared to OTHER vegetables. Meats mog all of them. That's why vegans look garbage and age so quickly.

For me, it's this
>>
>>20420654

It's perfect to needlessly argue and troll about since it's such a simple ages old dish - you take pasta and add ham or other meat, cheese if available, egg and whatever else to make it calorie rich and nutritious and delicious - and therefore existing in endless variants and as long as pasta itself.
So by just insisting that THE Carbonara(TM) has to be made exactly like THAT with X Y and Z you can have ENDLESS discussions and arguments. That already starts at the question if THE Carbonara(TM) contains cream or not and that of course fucking noodles with small pieces of meat in creamy eggy sauce ONLY as a dish exists since it was "invented" using the meat rations not even 100 years ago yadda yadda yadda.
No other dish in its simplicity is such a perfect target for that.

>>
the fuck is carbonara? just pasta with anything thrown in with it?
>>
>>20414009
Almost. Just need Alfredo sauce.
>>
>>20426756
Pasta sauce made of fried guanciale, pasta water, egg and cheese.

It's very rich, and basically an instant meal - from start to finish should take about 15 miinutes including clean up.

Americans for some reason changed the guanciale to ham, added peas and changed the egg to cream.

>>20422014
I have no idea why boxed carbonara would exist, it's literally a 15 minute meal, start to finish.
>>
>>20415627
Kino at least it's not a scrambled egg
>>
>>20416213
>bacon, cheese & eggs
>bland
How?? Literally contains three very strong and distinctive tasting things, and yet somehow yours is coming out bland? And you think vegetables are more flavourful?
>>
>>20416235
>missing 80% of all basic nutrients
I don’t know where you’re getting your nutritional information from, but eggs, meat and dairy are literally the most nutritionally dense foods you can get and have everything you need besides vitamin c. They’re way more nutritious than any vegetable.
>>
>>20427555
I know where you get your information from, and those people are retards.
>>
>>20427562
Yeah, from nutritional scientists. The only retard here is you. Eggs, meat and dairy are complete protein sources, so contain all your essential amino acids. Eggs and dairy also contain 12 of the 13 essential vitamins, only missing vitamin C like I already said. With pork having 9 essential vitamins.
>>
>>20414009
Carbonara is not a real dish, it's an elaborate joke by Italians to prank foreigners
>>
>>20420073
My entire life my mum and dad always made carbonara with cream, bacon and fettuccini.

Italians can seethe all they want, as long as the dish tastes good.

Perfection! British chefs like to add vegetables to these dishes because otherwise Brits wouldn't eat their veggies for the day.
