I just bought this little model Saturn kit. I want to stick some kind of single board computer in it to turn it into my own "Saturn Mini". What single board computer would be the best for this? And what Retroarch (I assume) core would have the best compatibility with the most games?

is it well made?

I haven't gotten it in the mail yet. I think it's fairly well made as it comes with mock electronics to put inside it.

The only decent Saturn emu is Mednafen, you aren’t running that full speed on an SBC.
