There's no mountains around it, and the castle lies on a steep outcrop that overlooks Blackwater bay. The grand cathedral or whatever it was called was located on the only other hill in King's Landing, and was elevated from the skyline. If King's Landing really had hills overlooking it like this, it would be easy game. But it didn't. The blackwater rush was also impossible to ford for most of its length except a long way inland. Which is why Stannis couldn't encircle the city. The angle of this shitty CGI view theoratically shows KL from the southside (coming from the Reach), which is the direction that Stannis' army attacked from (situated across the rush). It was all cleared ground, since Stannis could deploy his massive army and siege equipment along it.
