I lived way out near the end of the orange MRT line, a short walk from where Taipei ends and Taoyuan starts. I took the bikes everywhere I could. I rode up from the Crescent Bridge to Bali one day just for fun.

Killer hiking trails all throughout. I did a couple of trips with a group, plenty while solo. Elephant Mountain is a good place to start if the weather is decent. Bring water and snacks.

I also took a trip down to Tainan on the high-speed rail. Good snack scene down there.
