Been out of the game since Tau came out...what am I in for?

My wife enjoys art stuff and she hasn't painted miniatures before, but she wants to see if she's good at it, even if we don't like playing it I suppose you can sell the miniatures later right?

I know there's usually not a lot of options for these starter sets, anything I should know before getting too deep into it?

Should we use a pre-existing chapter color, or make up our own? Are there any second founding or so on chapters with bright pastel colors?

I know that's not very grim dark...but it is 2021...I'm sure there's someone out there buying pink Space Marines...
