Since europeans also spread ideology throughout the world, the whole view of "insects are icky and you should not eat them" spread as well. As a mexican I have never eaten a bug, although I know that's more common in the south of the country. I probably wouldn't eat them either, who knows. I mean, if we talk about bacteria and diseases they carry, it's probably not worse than eating chicken or pork.

I think it's more about what's practical. Cows are huge, pigs are substantial, chickens used to be let wander around and gather much of their food on their own. Rabbits used to be common, but I suspect they just went away because it's too much work for little meat, which would make them too expensive. Pigeons are edible. They also stopped getting used for food. Few places bother with sheep except in places where they can be let out on their own then gathered for slaughter.
