The guides are 20° so you'll be limited to that if you use them, but you can technically take out the diamond plates and sharpen to your own angle. 20° is too high of an angle for me personally. I prefer 17° on my pocket/hunting and kitchen knives, which I think is the sweet spot. Some type of guided system is going to be best for achieving that.

>>2650894i've filleted fish with a tiny victorinox SAK just fine and the havalon piranta is one of the most popular knives for gutting and skinning elk here, i'm sure it can handle a trout or bass just fine. in any case i will see when it arrives

>>2650903They sell Olfa snap blade knoifes at Lowes. I think Home Depot only has Husky ones. If you’re at Lowe’s, over in the tool section by the other knives and cutters, they have the 9mm, 18mm, and 25mm yellow plastic ones for $7-$15 depending on size. And in the paint and scraper section, they have the all metal 9mm which super compact.If you get one and like it, you will probably end up like me and get the NT Cutter from Amazon shortly after. I always would grab the standard utility knife when I needed a super sharp blade, but it’s no sharper than a pocket knife after a couple tough cuts, and the snap blade solves that problem.Damn I’m about to go buy a larger NT cutter, they have these sweet low angle blades that are like scalpals as well if you want it. I’ve been wanting a larger one for drywall and carpet.
