You can never have too many knifes. Just nothing too big or he'll keep "forgetting" it at home. If you want to spend a bit more cash, then make sure the steel is nice, so it doesn't get dull after sharpening up a single stick. A cheaper option is a nice pocket knife with extra tools if he doesn't have one yet.

Travel food you buy in stores is never as good as something made yourself - do you think you could make some beef jerky for him? Homemade granola bars and hardtack are also cool.

There is some stuff everybody needs. If you know what somebody has it should be possible. You can also listen and usually at some point, if there is something it will be mentioned.
If it’s cheap stuff, than it won’t be useful at least, if he isn’t extremely skillful. At which point he probably doesn’t really need gear in the first place. If it’s something expensive just get gift it together with somebody else, if it’s too much otherwise.
Good fire steel or knifes (even if some here will disagree good small/small medium sized knifes are available for 80 euro/100 dollar). High quality paracord is something you always need and use up. If he has no good compass that would be a nice too have. They come at about 80 euro too. Good boots, jacket/trousers or underwear will probably need him to be involved. Books on the plant identification are also something to look into. If you have and want to spend the money it could even be a course for you and him. Or simply just a trip somewhere.

You can get these nice nesting gaiwan tea sets with snug carrying cases. I have one for longer day hikes in the autumn and I really love it. Bring hot water in a thermos or heat it up with a small stove.
