Bikes haven't changed as much as you think: they had cleats and foot retention back then, and the weight difference between top end road bikes then and now is 5 pounds at an absolute maximum. To give the modern amateur a chance against the 80's pro it would have to be on something like a modern TT/aero bike on a flat course where the equipment makes the biggest possible difference.

Any sport involving racing will have people who get in the way. It's enough of a problem that most forms of wheeled racing has enough crowd control to remove that factor entirely or minimize it, but still it happens anyways.
