Well, I don't think any mecha is long enough for 10 episodes training arcs, but G Gundam like mentioned above, alongside Gaiking (2005) and Gurren Lagann have some of the stuff you'd usually see in fighting shounen.

The new China pandering SD Gundam series are training arcs as well. Practically every character is undergoing a training arc, except for big daddy Astray.

Gundam Build Fighters definitely fits, I'd also mention Giant Robo. It has those life and death battles between martial arts masters where only one man leaves alive. Or maybe just skip the mecha and go for Grappler Baki

Iron Leaguer is 100% this. It's literally the entire show. Even moreso than G Gundam. There's entire episodes dedicated to how to stop Gold Arm's Genocide Screw baseball pitch. It's glorious
