I'm in the process of watching every Seagal movie with some friends & wholly agree with you here. Last two aren't nearly as good IMO but enough budget and genuine effort was used in the production that they're actual movies and not the outright scams that follow. To be fair, helicopters want to naturally explode on their own. All it takes is a little push.
The fact is that movies have to work off the suspension of disbelief, Blofeld is running away on a fast vehicle to raise the stakes, Bond has to pull the golden BB shot to save the day. It's not meant to realistic. But they did add the spark effects, the flames, and the helicopter crash lands.
On that Segal movie, they filmed a helicopter and spun the camera around to make it look like the helicopter is spinning out of control, then use a static shot overlayed with a stock explosion effect. The bad part here isn't that a handgun brings down a helicopter. It's how fucking cheap everything looks.

Aikido is really neat in a dojo setting. But Ufc/mma is kinda the crucible for martial arts practicality in a sparring setting. And Aikido gets fucking filtered hard by basically any other martial art. In the ring a combination of karate and Brazilian jiu-jitsu has risen to the top more or less. In a street setting the best skill is to not get in fights at all, and the second best is to be bigger and stronger than the other guy.

In Judo you physically reach up to a motherfucker, put his center of gravity over yours, and let Newton do the rest. In Aikido you're relying on whimsical grabs - an opponent will pull back his limb to break the hold before you can put him in a lock, and keep striking.
The core issue of Aikido is that it exists in an echo chamber. All Aikido practitioners train against Aikido practitioners, keep this shit up for decades and you end up with a complete cargo cult. Even if there are core principles of Aikido that worked at some point, nobody has stuck to these principles and tested them against live combat, so if you learn Aikido you're just learning the fake McDojo bs that's been churning for years.
The only way to save Aikido would be to go back to the ancient scrolls or whatever and test the techniques against uncooperative opponents, essentially starting over and forgetting the modern form.

I'm 30 and grew up enjoying his 80s and 90s stuff. Under Siege 2, and some of the others up till about 1995 were like a shittier tier of Broken Arrow or Con-Air-type film. Enjoyable, but as long as you understood you were watching the equivalent of a shlocky, silly live-action anime/cartoon (think the Fast and Furious franchise, which I don't care for in the slightest).

But you gotta understand his reeeally early stuff, from the 80s and *early* 90s slotted into an overall action sub-genre of white dudes kicking peoples asses with eastern moves (Chuck Norris, JCVD, and of course Segal). There was the advent of Jackie Chan movies, Hong Kong kung-fu was always a thing and ebbed and flowed in how visible it was in the zeitgeist, but there nonetheless. Shit son there was even a black version in Wesley Snipes with films like Passenger 57 (fun movie too). It was an enjoyable era for echo/latter-Boomers, Gen-Xers, and millenials, who were kids at the time.

But make no mistake his shit fell off any kind of unironic-enjoyment cliff after the mid-90s, and he fucking fell *hard*. Now he exists for the very same crowd that included Above the Law or Under Siege in the action movie Saturday night movie block alongside Universal Soldier, Rumbe in the Bronx, and Escape from L.A. to now instead laugh at the pathetic has-been loser he is now. Karate isn't "BS" per se, the problem is that the traditional techniques leave you exposed, there's way too many McDojos, and the point fighting is extremely unrealistic. You'd need to train at a place that allows sparring. I remember watching some documentary about traditional karate dojos in Japan, they'd have really tough old guys sparring for real. Pretty impressive, but good luck finding a place that would let you go that hard in the West where people see Karate as an activity for parents to drop kids at for an hour.

My experience in martial arts (Tae Kwon Do and not Karate) was that they did do sparring, but it was a special optional class Saturday morning for 40ish minutes, and it wasn't full on fighting. Focus was on leg-strikes; you could punch but these weren't scored and headshots with a punch was a big 'No;' Punching itself was more about setting up the other person for a kick or interrupting the kick.

Really if you wanted to fight you were encouraged to go to a full MMA gym to learn that. They did also have a BJJ course.

The wrist locks are pretty good but other than that Aikido teaches nothing with an actual self defense value.

Boxing and its variants, BJJ/Wrestling and Judo are the best things you can go for. Ideally learn both striking and grappling.
There are other decent martial arts out there but they are simply too niche and only shine in a few moments.
BJJ on its own teaches you getting and defending submissions, standup grappling, getting and defending takedowns, defending when you are on the ground while the opponent is not, holding control positions and escaping from fucked positions.
One massive advantage you also get is the stamina from sparring because anyone with no sparring experience will gas 30 seconds into a fight.

Akido is derived from Akijutsu, the same way Judo is derived from Jujutsu.
However where Judo is a legit full contact sport equally applicable to self defense Akido is more akin to Taichi and Kung Fu, it's a dance and prone to bullshido.
And Akido clearly doesn't put any emphasis on diet and physical training, in the 1980s Seagal was a skinyfat DYEL and today he's just plain fat and this is true for others I've seen videos of.
Finally in the videos of Seagal demonstrating Akido his opponents are very obviously offering no resistance as he deflects them and throws them around and they jump as they're thrown.

So the question then becomes: does Akijutsu even work as a means of self defense? It isn't as well known or practiced outside Japan like Akido is so information is sketchy. My understanding of it is because of its origins with the Samurai it seems to focus on being able to grapple someone running at you with a spear/sword/knife and appears to have a strong emphasis on hand and finger locks and compliance holds. Supposedly Japanese police do train in it.
So someone is just gonna have to test it. Put Akijutsu practioners in a ring with boxers, judoka, wrestlers, karate, mma, etc
