What would the West Germany's Leopard MBT looks like if they didn't opt for mobility over protection? Would it be similar to the Panther or the E-50 concept but more modern?

probably like a charred wreck since "protection" doesn't matter when you are facing +1,000,000 Soviet tanks rushing toward you

it would look more like the M60A1 with its ~300mm of turret protection on its needlenose turret, capable of withstanding hits from the 115mm sabot rounds
if they accurately predicted 125mm sabot, then it would have to be thicker still
