I personally enjoy gardening to much to not grow vegetables for food. While i dont have a root cellar, crops like beans, peas, tomatoes, peppers, onions, garlic i can/blanch and freeze/cure/dry, and carrots, turnips, spinach, lettuce i keep under poly low tunnels to harvest through the winter. Crops like kale, brussel sprouts i usually just keep out and they do fine with snow if theyre hardy varities.
