OK, let's do it. Thanksgiving thread. I need to make a pumpkin pie. I want to make the crust from scratch. Any good recipes to share? I want a perfect crust. Don't mind blind baking it.

the cold water and freezing the butter are very important. using a food processor helps a lot if you do it right. refrigeration in general is important to keep the butter from melting into the dough. you can also substitute vodka for water (entirely) for a flakier, more tender crust, too afaik. chef john supplements the water with vinegar for that reason.

it seems like a pretty standard crust so probably only if you normally blind bake it for pumpkin pie, anyway. it depends on your recipe but it seems like I hear people complain about overbaked crusts with pumpkin pie more often than underbaked. do you have a pie guard/shield?

Freezing the butter isn't important unless your kitchen is very hot. It's 760 in Phoenix so refrigerated butter is fine anywhere to whemst a thanksgiving thread is relevant

I’ve been messing around with the hippy faggot milks for a while now due to Baby Nigger Jesus taking my Kidneys and I’m fairly certain Eggnog would work just fine with coconut cream (thick) and silk almond milk. I would probably advise unsweetened though depending on your nog recipe.

I use Sally’s Baking Addiction recipe but replace the crisco with lard. Absolutely hate dealing with pie crust but it always turns out great. For pumpkin pie I prefer graham cracker crust
