Last year my friend held an oktoberfest party and I showed up there with prepped whole piece pork shanks that I finished off in his oven. I wasn't able to find lard tho so I had to make do with tallow. Everybody at the party loved my Schweinhaxe and it was the highlight of the dinner. This year I planned ahead better and have secured 10kg of unprocessed lard cuts. I'll have to render the fat myself and i bought more than I needed, so that in itself should be a fun project. This year I'll show up again, with 4kg of whole piece porkshanks and enough lard to cook into schweinhaxe.

>>19729750Idk, I followed a recepie I found and it says to cook the pork shanks submerged in lard at 100°C for 4 hours, then drain it all and let the lard drip off while the oven heats up to 250°C, pop them in for a 10-15 minute hot burn to get a nice roasted surface.
