These chicken drumsticks were 88 cents a pound. I've always wondered how much of that price is bone. So today we're going to cook some and look at the weight after the meat is off the bone.

I would think the goal was to help comparison shop by being able to compare bone-in vs boneless meat.
So OP would be better off using breasts or thighs since you don't normally buy buy wings or drumsticks boneless.

This is a rough estimate, and its true for both legs and thighs (legs being a massive pain in the ass to debone. Too much cartilage and silver skin. Thighs are finnickier to debone though).

OP may have a good point in that cooked meat weight is sometimes needed, but I think most caloric information is determined from raw weight. However, the cooked number is only going to be useful for that specific brand that specific season, because chicken diets can change to increase/decrease water retention.
