I'm all about that sear on cast iron and finish in the oven method I learned from Alton Brown before he turned into a fag.

I'd grill it if I didn't have a big enough steel or cast iron skillet. if you pan fry it normally, put the fat strip down first to render some out before searing.

Salt it, let it sit for 20 minutes to an hour, then use a paper towel to dry it thoroughly so it sears correctly.

And don't put any of those seasonings on it for gods sake. Salt. Canola and butter in a pan. You can add some dried herbs towards the end if you like. That's what I'd do anyway.

put it in a jar and set it in the sun for 6 hours.

Heat oven to 325°
Heat iron skillet
Season steak with salt and pepper
Sear the fat cap first (like bottom left)
Sear the other narrow side
Sear each broad side side
Put steak on roasting rack with leave in thermometer
Wait until it reaches preferred doneness (140°F for medium) - about 15 minutes
Pull steak and tent in foil for 10

3. wrap with paper towel
4. stick in the fridge for 1h
5. let it sit in room temperature for another hour
6. On each side, fry for 02:30 on medium-high heat in a large quantity of 50:50 butter and oil while spooning the oil onto the strip of fat constantly (can also tilt the pan occasionally to deep fry the fat strip for 10 seconds at a time)
7. let sit for 5 minutes after cooking
