I'm all about that sear on cast iron and finish in the oven method I learned from Alton Brown before he turned into a fag.I'd grill it if I didn't have a big enough steel or cast iron skillet. if you pan fry it normally, put the fat strip down first to render some out before searing.Salt it, let it sit for 20 minutes to an hour, then use a paper towel to dry it thoroughly so it sears correctly.
