These have been so cheap at Aldi for a couple of months now. I buy them often because they literally wait for you until you are good and ready to cook them. Good end of week kind of side.

I typically slice off the the stem end, bottom end, then straight across the middle where the bulbous bottom starts.
Peel with a peeler, then you decide big cubes or slices. I usually steam pretty big cubes if using in baked mac n cheese recipe, bake with a toss of seasoning and olive oil maybe along with several other veggies on a sheet pan, or I add cubes to a curry simmer sauce along with my meat, peppers and onions. I love it these three ways.

You can hasselback each half and add some sage, bay, lemon, or basil leaf flavors between the slices. Or just cook the two lengthwise halves on a sheet until roasted and done, and use the roasted flesh in purees for soups, pies or stuffed pasta fillings. Cooking some italian sausage with a creamy pumpkin or butternut puree doubles as a sauce for pasta, so it isn't just for stuffing.

Puree it, heat it up in a pot with protein and veg of your choice. The best way to eat it.

Cube it, drizzle with olive oil and light amounts of honey, salt, pepper, and cinnamon. Bake until soft (probably 15, turning the cubes, then 15) at 400f. Rosemary is good too although I haven't tried it.

Here's how I do pumpkin soup, but butternut squash is basically the same as pumpkin so this should work as well.

In bottom of pot, saute bacon until crispy (I'd use at least a half-slab for a decent sized pot of soup).

Add diced onions, celery, carrots and (optionally) parnsips. Cook in bacon fat until veg softens a bit.

Throw more aromatics in e.g. garlic, rosemary, thyme, sage or whatever else you think would be good, cook until nice and aromatic. Freshly ground black pepper is a nice addition at this point.

Add your diced squash and then however much stock you need to make up volume. Optionally, you can use pre-cooked squash
here.

Light boil until the squash is fully cooked or, if you used pre-cooked squash, for at least 20 min so the flavors all develop.

Blend, season to taste.

Yes, they are purely decorative in many cases.

I grow several types that are very good for eating. Long Island Cheese are a very nice variety. The Japanese have developed several very nice eating pumpkins as well.

If you're trying it for the first time then your best bet is to use it in a soup so you know what the flavor is like, but it's pretty versatile. You can add it to casserole/stuffing, use it in any foreign recipe that calls for pumpkin, make it into pie, etc.
