Is it a bad idea to hit up the grocery store today just for regular food? I hate being the one guy in the self checkout line with 4 items having to wait for a dozen whales with 200 items in their carts needing a worker to show them how the scanner works for every single item, and that's just a typical day.
>>
>>17036024
It probably depends on the time of day. Unless you have to slog through traffic early morning is ideal.

This year I"m only prepping two dishes for the family spread.... but doing both tonight. One of them is broccoli salad... which I cannot recommend enough, it's so good. Broccoli salad is god tier. The other is Korean Corn cheese.

Poulty in general used to be considered "carnal", and was a real treat to be consumed rarely. Chickens are how it started, but THEN we discovered turkeys. America had the turkeys. We had the king of sex birds. So it became a pinnacle point of our feasts, because it was the ultimate sinful meat. Super giant poultry for the horny soul.

>>17037165
Im in Wyoming but have lived in Montana, great place to be, hope you are used to cold weather.
>>
>>17037132
it can be a pain to get everything ready by 2pm. Especially if you're prepping a larger turkey, if you've got a 26-30lbs bird for example could take 5-6 hours to cook. Which means waking up at 6-7am to start prepping your turkey to put it in the oven by 7-8am to have it done by 2pm, and then you'd still realistically want some time to rest the turkey after cooking.

So yeah, 2pm is a pain in the ass.

It's not too bad with a smaller 15-20lbs bird though.
>>

why the ice?
>>
>>17038490
really it should be done in the fridge to make sure things stay cold enough to prevent any bacteria growth.

Using a cooler works, but you need to make sure the liquid stays cool, so throwing in some ice helps it stay cold overnight. Even more so if it can be left in the garage or basement where the ambient air temp is in the 50's or 40's.

try to make the day fun for the other people. it will end up being fun for you. I say this as an intractable introvert and antisocial freak. when I shifted the focus off how shitty I felt and onto how to make over people not feel shitty (asking them questions, showing interest in their lives, embracing and laughing at the inevitable awakwardness) the difference was night and day. I cooked some diced up pork chop meat, mixed with some hamburger meat and onions. I overcooked it so it is kinda chewy. Its in the fridge now. It's for the stuffing, stovetop stuffing.
Thinking i will chop up some carrots and celery and onion into little bits and throw it into the water while it comes to a boil, then throw the butter in after boiling and remove from heat. Then toss in the bread stuff and meat and dried cranberries and stir for a few seconds and cover it up. Is that a good way to make stovetop stuffing instead of just the plain stuff from the box.
>>
>>17038815
/pol/ really does rot the brain
>>
If you cook carrots and celery with the turkey, should they go in the guts hole or in the roaster pan along side the bird?
Should i add them at the begining of cooking (worried they will turn to mush) or add them in about halfway through?

Yes, Kenji actually says you get a better finished bird when you spatchcock it.
https://www.seriouseats.com/butterfiled-roast-turkey-with-gravy-recipe
That shape of such a unit (especially when your is over 20lbs) makes it literally impossible to evenly roast otherwise with the dark/white perfect at the same time.

I've been doing the spatchcock meme for the last couple years. I'm talking about completely deboning it like for gallantine but instead of rolling it up with stuffing just roasting it laid out in the pan.

That sounds lovely and it’s wonderful a non-American wants to celebrate. It’s about giving thanks for how lucky you are to be alive (including how much food you have access to, we are Americans).

Perhaps a lighter vegetable side dish like roast brussels sprouts or salad, but that depends on the crowd you’re cooking for. I’d say you have a great spread though, diets go out the door on Thanksgiving .

we are doing 2 turkeys, one my mom is gonna do roasted as normal but I am gonna spatchcock the other one and put it our smoker, recipe I found says cook time for a bird around 14 pounds is 3 to 4 hours at 275 (the highest my smoker goes), the one I am gonna do is just a bit over 11 pounds, I am planning to also do seasoned butter on top and under the skin, if anyone else has done one before and has any tips I would be thankful for them, I've smoked hams, bacon, cheese and turkey breast but not whole spatchcocked, other than that I am also doing dinnerrolls, its almost 4:30 AM here, don't want to start on the rolls to early since I have a bad back so I use a dough mixer thats pretty loud.

My sister is taking a vacation for Thanksgiving day proper into the weekend - so my parents have my nephews over - elementary school age.

The rest of my family did Thanksgiving dinner on Tuesday before my sister went out of town (which I missed) but I contributed stuffing and a sour cherry cheesecake nonetheless.

Hopefully we will have a nice day trip hiking today as the weather is supposed to be mild.

I made "char siu" style pork and beans last week meaning boston baked beans plus some asian spices and sauces like soy, fermented bean curd, five spice, and hoisin.

I had that in my freezer so i defrosted it when I woke up this morning and used it to stuff bao buns (sorta) that I made using this dough recipe (doubled):

https://cookpad.com/us/recipes/5081428-tangzhong-pai-bao-hongkong-sweet-buns

The recipe made an absolute liquid of a dough and I should have added MUCH more flour - but otherwise a good recipe.

I stuffed the pork and beans filling into the dough and it made about 1.5 dozen and those are having a second proof in my (off) oven.

I also had brownies I made and individually wrapped in my freezer for lunch - as well as corn muffins I made yesterday as a side dish.

So my nephews will get to enjoy homemade scratch-made bao buns, corn muffins, and brownies for lunch today and that's nice.

ham and turkey are fairly simple as you can more or less put them in a roaster and ignore them beyond basting them, for a lot of stuff you can mix them up ahead of time, put them in the fridge or even outside in a car at this time of year and then get them out and put them in the oven one after another, depending on how much you have to do you can wrap the pans with foil overtop in towels so they stay hot for longer while other items are baking.
>>
Americans need to take the goose pill and leave the turkey in 1893.
>>
>>17039819
butchered geese before, they were just like big chickens and not really much different than turkeys, though we didn't really raise them for meat but instead for eggs so they might've just been old.
>>
>>17039820
Every year my parents raise about 8 to twelve geese on their property. Around christmas time they go to the chopping block and we have a fresh one on christmas and then the rest randomly throughout the year.

They give some away to friends and family and we keep the rest to ourselves.

I fucking love goose.

How do people find the time and ability to cook several dishes with one oven and before dinner?

Im stressing out on not having enough time to cook the ham after the turkey and my bread
>>
>>17039917
these last couple years we have split the dishes across the family, every bringing just a couple of things, also having a roaster is a good idea to free up your oven.

>>
>>17039949
>when a guy wants a girl to suck his dick does he give her a steak, or sweets?
you give her attention.
if you require anything else you are a beta.
>>
>>17039271
If you're talking about sharing oven time, desserts probably make the most sense to make first since they shouldn't be served super hot. Put them in the warming drawer if you have one prior to serving.

Then I'd do the ham + potatoes to leave the turkey last so the skin is fresh and cripsy for serving. Alternatively part your turkey out and you might be able to fit ham and turkey in at once but plan on longer cook times and use thermometers.
>>
>>17039963
My attention is worth far more than trivial foodstuffs. You also get to share them with her if you so choose.

I am beat, dinner rolls dough is risen but I feel like I am dying already, normally I would take the hour when its raising to rest but since I instead spent that time cutting the spine out of the turkey, then spreading the herb butter over it and cleaning out the smoker, but after a little rest I'll be back at it, the dough should make probably 50 or so rolls, which might sound like a lot but we've got a big family and some friends are expected to be here, even with my one sister having the coof who has to miss this one we're gonna be expecting 20-30 people, and if there is any left then I can make sandwiches the next day.

I do Thanksgiving twice. My family shows up today, not many people. My wife takes this one. She'll do a turkey and a ham, a few common midwestern sides and I try to help but she's pretty much got this.
Saturday is her huge redneck family and it's an all day bash.
>up early roasting a fresh ham in pellet grill
>deep fry a turkey, her uncle raises them
>her brother is bringing backstraps from deer he got this year
>side dishes, pies, all brought in from family members
>shoot trap in back yard
>wood stove fired up in garage, whiskey and cigars
>little kids running around everywhere
>teenagers in basement doing god knows what
>old men snoozing off and on in front of the TV
>women busy in kitchen, clucking like hens
I have a blast with her family and it's a lot of work. My family is way more low key.

My grandparents had 8 kids, 2 sets of 4, spaced 15 years apart. Extreme amount of cousins, and Grandma always had a live-in type of handyman or maid who helped her prep, some sad person she brought home from the state of almost homeless she met at the grocery store, then, gave them a roof. These people joined the family and always helped her make her 30 pies, 4-5 mains and put out the cookie jar with old world intricate christmas cookies, like pizelles, biscotti, checkerboard cookies, thumbprints with jam, shortbreads, etc.Different flavors of fudge in tins. Two kinds of fruitcake in tins. She canned all year to put out the chutneys and relishes to go with it all, from watermelon pickles, corn relish, to homemade chili sauce.

My childhood thanksgivings were pretty much all of this minus your deer, but someone might be jerk seasoning some wings or stuffed jalapenos on the grill. The garage door would be kept open and half the neighborhood is dropping in to say hi, while one of my uncles has every instrument necessary for zydeco, blues, 60s and 70s rock, for jam sessions that can be heard for a 1/4 mile radius. There will be 40 cars in the massive driveway, and several coolers with iced beers, sodas, waters, and it will last into the next day throughout the patio, garage, pool deck, everywhere. There could be anything from yoohoo to strawberry soda to beer.

My grandfather, who was an utterly alone and unfortunate orphan by his 12th birthday where he started to support himself on his own, always teared up, and shed a tear in emotional joy when you arrived and greeted him with a kiss on the cheek. He just literally loved holidays. His was a successful life surrounded the family he created on his own. Not only did he support his own family, but sent support to this wife's mother all the rest of her years too. Truly a thankful legacy.

I was only on the hook for a salad and appetizer this year (thanks gramma / potluck culture) so I made a spinach harvest instagram salad with apple, pecan, blue cheese, spinach with a homemade rasp dressing.

I also decided to bring pelmeni with some dill sour cream sauce. It's not very traditional, but honestly turkey sucks and I know a lot of my family agrees so a meat appetizer I thought was a good idea.

Hope everybody enjoys their meal, don't fight with their family too much and good luck to all the chefs.

I'm hungry
>>
>>17036317
I love the holidays. I always put in for telework and spend Thanksgiving to New Year eating holiday food, enjoying my forested home, and playing Stardew Valley. Also watching Christmas movies like A War in the Pocket.
>>
I'm thankful for having friends who can depend on me (and on whom I can also depend).
Done so far:
Broke down a 19lb-er to use the back and wingtips in stock-making and freeze the thighs and drums for future eatings.
Made the stock which got then made into gravy.
Made purple cauliflower stamppot.
Made cranberry rhubarb sauce.
Made stuffing-stuffed cabbage.
Seasoned the breast with rosemary, sage, black pepper, dried lemon and dried onion and shoved it in the oven.
About to stuff some winter carrots with rice, mushrooms, pine nuts and dried, unsweetened sour cherries which will go into the oven with duckfat and dill once the turkey comes out. Would've used turkey fat from the stock but I used it all up making the gravy and stuffing.
About to braise some baby corn in compound butter flavoured with parsley and dried onion.
About to make blue foam jell-o.

My turkey had practically no thighs this year. The drumsticks weighed more than they did. That's weird. Anyone else had a similarly oddly-shaped bird?

>>17040934
I just don't like when it's made into a dessert. Pumpkin pie. Zucchini bread (it's a fucking cake and you know it). Butternut squash muffins. That sorta thing. Hate'em. I like squashes when prepared in non-sweet ways.
Like... if I couldn't get the baby corn this year, I was gonna cook a spaghetti squash or acorn squash instead. The spaghetti squash would have been with chilli, garlic, parsley and olive oil. If I got acorn squash instead, I would have wedged it, dusted it in corn-starch and deep-fried it though I don't know right now how I'd've seasoned it.

Local supermarkets in my area started carrying goose on the regular a few years ago. Five or so, I think. Waaaaaaaay to 'spensive, tho. Plus, I'm terrible at roasting fatty birds, My roast duck is always a travesty and while I've never roasted a goose, I would guess I'd fuck it up just the same. I do pan-sear a mean duck titty, however.

Interesting choice combining two very sour ingredients but I can see the flavors working. Do you need a ton of sugar to counterbalance?
>>
>>17041371
I don't use as much sugar as you're supposed to, anyway, but I do add more sugar to the cran-rhu sauce than I do normal-ass cran sauce, yes. Another good addition is dried, candied hibiscus flowers. I didn't put any this year, but it works really, really well.

Ask if you can help clean the carcass then make stock from it, turkey noodle soup the week after Thanksgiving is delicious and comfy as the snow begins to accumulate outside.
I made stock the last two years and plan to again this year, last year I used some of it to boil rice in to make turkey-fried rice.

Depends on how you plan to combine the two. I know chestnut pies exist in various forms, some made with whole chestnuts akin to a pecan pie and same made from chestnut flour and therefore more similar to a semolina pudding in texture. There are likely others, too. If I were to make a cherry chestnut pie, I'd make the first type of chestnut pie I mentioned, the one that's like a pecan pie, and just toss some cherries in there. I guess it would be a chestnut cherry pie rather than a cherry chestnut pie, though. Does that help?

Balsamic, honey and cider glazed duck
Smoked turkey
Ham
Dressing/stuffing/idc what it's called I don't eat the shit and someone else made it
Scalloped Potatoes
Green Beans
Rolls
Deviled Eggs
Banana Pudding
Possum Pie (it's a southern dessert, it's cream cheese and chocolate pudding topped with whipped cream on a pecan shortbread crust)
Pineapple Cheesecake

9 people will be attending.

We have way too much food, especially since two of our guests decided to dip out at the last minute. I decided that I'm not ever hosting this stupid shit again.

My family has Thanksgiving lunch. Then, we nibble on the leftovers the rest of the day as we play cards, reminisce, yell at the kids to stfu etc. Well, we used to. Is the pudding honest-to-God banana pudding or that nonsense with the vanilla pudding, Nilla Wafers and sliced nanners?
As for the cheesecake, is the filling made with pineapple in it or is it just glazed with pineapple on top? My family go with the latter sort of cheesecake and I'm... not a fan.
