I do like cod, just like the others better.

As for salmon, I like it pretty much every way. It's the one I always have some of in the freezer, even if it's not my favorite.

Though I make it for lunch quite a bit when I've got a little time. Seasoned with just a little salt and pepper, broiled a few minutes, and put on a sandwich with whole wheat toast, lettuce, tomato, & avocado.

I use salmon in my Amerimutt take on moqueca.

Marinade:
~1 lb salmon, cut into 2-inch pieces (largish-bite sized pieces)
4-6 cloves garlic, peeled and minced
1 Tbsp fresh lime juice
1/2 Tbsp sweet paprika
1/2 Tbsp ground cumin
3/4 tsp salt
1/2 tsp ground black pepper

Stock:
1 Tbsp. Extra virgin olive oil
1 small onion
1 small/medium green bell pepper, seeded, de-stemmed
1 - 2 small/medium tomato (approx. 1 cup, diced)
1/2 14-ounce can regular (not light) coconut milk
1/2 cup Vegetable or Seafood broth
1/2 tsp sriracha
1/2 large bunch fresh cilantro, chopped
Salt and freshly ground pepper
Green onion, for garnish

1. Marinate salmon: Mix together the marinade ingredients. Let the salmon marinate in this paste for at least 2 hours. The longer, the better.
2. Prepare the vegetables by roughly chopping into large bite size pieces
3. In a large pan (large covered skillet or Dutch oven), lightly coat the bottom of the pan with olive oil, and heat over low/medium heat. Add the onions and bell peppers, and sweat for approximately 10 minutes until onions are soft and translucent.
4. Add the tomatoes, coconut milk, broth, sriracha, and about half of the cilantro and stir to combine.
5. Place fish pieces into pot. Pour in all remaining marinade. Top with salt and pepper.
6. Bring to a boil, reduce heat to low, cover and let simmer for 30 minutes to an hour, until the vegetables are cooked through.
7. Garnish with cut green onions and remaining cilantro, and serve with white rice or crusty bread.

Just grilled some barramundi last night and it was definitely one of my favorite fish filets ive had in a long time, haven't done much else with it yet but I'm sure it'll be good. Decent price too and was still great for being frozen when bought.
Other favorites are probably things like grouper, (puppy) drums and mackerel.
