Basmatti tastes like it was exposed to wood fire and then a mouse came by and rubbed they're greesy feet and smeared their rodent anus over the already dingy rice. Then you can imagine the worst part. An Indian man running his fingers through the the greyish yellow grains like it was water from the Ganges and you do know what they use their hands for in India, right?
Jasmin on the other tastes like the hands of a virgin maid prepared the pearly white grains and layed them neatly in a pile on a banana leaf to dry. There is a spring near by. it gives of a delicate aroma that of fresh water into the air as trickles down the rocks. The virgin maid enjoys listening to the quiet splashes of the spring as she works to inspects each grain carefully, leaving no imperfect grain. They're all perfect. The maid will fall asleep midday after a finishing her work. Whilst drying under the warm sun with a light refreshing breeze the blossom of a jasmine flower delicatly drifts on top of the pile of rice. Over a few hours the sweet smell of the jasmin flower has infused the air. The maid has awoken and she notices the flower. She picks it up carefully as not to tear it's petal and sets it back down in the gentle stream of running by her side. watching until the white flower dissapears down the stream.
They say when you eat a grain of jasmin rice you can tell where in the pile it was left to dry. Was it at the bottom of the pile infusing with the herbal tasting banana leaf or pherhaps it was closer to the stream of water, giving the rice a delicate flavour of minerals from the water? Did the virgin maid handle it? Then maybe you can taste her sweat milky touch. Maybe the grain was resting nearer the top of the pile. exposed to the suns warmth but also the cooling fragrence of the jasmin flower, adding such a delicate flavour. Each grain of jasmin rice has it's own story and it's exited to tell you.

I just made koshihikari rice for the first time to make onigiri, and it was absolutely wonderful.
But I had a bunch of rice fused to the pot when I finished.
How do I avoid that next time?

Sticky rice or arborio for risotto, sushi and other applications when you want it to stick.
Jasmine is kind of a multipurpose, jack of all trades.
This is because as a rule of thumb - the longer the grain, the less it sticks. It's more complicated with enzymes but I'm not wasting time typing that up.
