One reason why your pancakes dont look so great may be your pan. cast iron or carbon steel give deliver much bettter results for frying at high heat because they give off much more infrared radiation than other stuff.

That must be really thin.

I use:
1 cup of flour
1.5 tablespoons of sugar
1 teaspoon baking powder
0.5 teaspoon salt

1 egg
4/5 cup of milk
0.25 teaspoons vanilla
1 tablespoon melted butter

mix wet and dry separately and then add wet to dry and mix, but not too much. it doesn't hurt it if it has a few small pockets of dry that didn't get mixed in.

The pancakes generally come out quite good and thick.

OP's "pancakes" don't look like they have any thickness at all. He probably uses way to much milk in his.

I've thought about adding chopped pecans to my pancakes but for some reason I never think about it until I already have them cooked.

What would be the best way to do it?

1) Just chop them up and mix in with the batter?

2) Chop them up and sprinkle on top of the pancake when first dded to the pan?

Would it be better to toast the pecan pieces first?
