I bought some bison tallow and duck fat
i pan fried a fucking amazing steak in the tallow, but what else can i use these fats to cook?

I use lard for everything. I both buy it ready-made if Im going to deep-fry in it, and render it if Im going to incorporate it directly.

Use the duck fat for roasted potatoes. Peel some golden spuds or new potatoes and cut into bite-sized chunks. Drop into boiling salted water and cook until almost fork-tender. Put some duck fat on a baking sheet or roasting tray and pop into the oven while it pre-heats. When potatoes are ready, drain, re-add to the pot, and take a little more moisture out of them while you shake the pot to rough them up. Place cut-side down (carefully!) onto your duck lubed tray, and cook turning once or twice until golden and crispy.

I have used duck fat for fries, pork sausage, and making fried rice stuffing (to put in duck).

Duck/Goose fat? Roast potatoes like others have already said, also goes great with roast parsnips and carrots. If you want to be a proper cheeky boy make a fried egg sandwich with it

it is not. ghee is cooked longer til the milk solids are burnt then removed.
