>>15391358I use lard for everything. I both buy it ready-made if Im going to deep-fry in it, and render it if Im going to incorporate it directly.

Use the duck fat for roasted potatoes. Peel some golden spuds or new potatoes and cut into bite-sized chunks. Drop into boiling salted water and cook until almost fork-tender. Put some duck fat on a baking sheet or roasting tray and pop into the oven while it pre-heats. When potatoes are ready, drain, re-add to the pot, and take a little more moisture out of them while you shake the pot to rough them up. Place cut-side down (carefully!) onto your duck lubed tray, and cook turning once or twice until golden and crispy.

Best solid fat for both taste and nutrition? I like the bison tallow and duck fat ideas...what about plain ghee?
>>15393686isnt ghee just the same as regular clarified butter?
>>15394232It is. It's just hipsters vain attempt to be perceived as "cultured and worldly"
Duck/Goose fat? Roast potatoes like others have already said, also goes great with roast parsnips and carrots. If you want to be a proper cheeky boy make a fried egg sandwich with it
>>15394232>>15394271it is not. ghee is cooked longer til the milk solids are burnt then removed.
