I have a lot of options around me thanks to the large immigrant population of Indians and Pakistanis. Overall I've found Lamb Biryani to be the king of cuisine for Indo-Pak meals. Once you bite the bullet and go find all the spices, it's surprisingly easy to make. It's basically just yogurt marinade with spices, then you either grill the marinaded stuff or stew it in a curry with cream or coconut milk. Throw shitloads of ghee everywhere and you're good to go.

Never really had it until I got into it this year, my town has several Indian places and I've slowly been exploring different things.
Absolutely love Naan and Onion Bhajis, and there's a ton of good curries out there. Captain's Pathila and Chicken Darbari are probably my favorites in my very limited experience.

Im south indian and india isnt really big on fish but compared to what the outside world knows as "indian" food its more from the landlocked states and western india.

All 4 states in the south have a coast line so fish is eaten but just not as much. The south has much higher rates of non vegetarians compared to the rest of india.

I started with some jar's of Patak's because I was binge watching Red Dwarf in the mid 2000's and I was like "I gotta try this vindaloo stuff this nigga always talking about". I liked it. especially the Jalfreezi. ate that shit for years. But then at one point I couldn't find it in stores or even online and I was fiending for some so I got creative and ordered some curry powders, I tried a bunch. my favorites are Frontier Co-op Vindaloo and Sun Brand Madras.

basically my curry is onions, peppers, chicken, and sweet potatoes in tomato sauce with a fuckton of curry powder and some crushed red peppers and a little vinnegar. slop that shit on some basmati and it's fucking deliscious. I don't even bother with Patak's anymore.

sometimes I make a quick little dish where I wrap Linquica or Chourico in foil with vegetables and slather it in my tomato/curry powder sauce and bake that shit for 2 hours. also deliscious.

I normally go out to eat indian every couple weeks but due to lockdowns, haven't been able to. I found an indian grocery that has frozen curries as well as non-frozen 'shelf stable' ones. They only had 3 packs of paneer makhani which made me sad, especially since they were so darn cheap. $2.50 a pack and when mixed with rice, will give you two small meals
