What's the difference between kosher salt and non-kosher salt?
Kosher salt literally just means "big flakes of salt". You're supposed to distribute it using your hands instead of a shaker. It's for more even distribution. The word "kosher" was just used because it was popular in Jewish bakeries (for bagels etc). It has nothing to do with actual kosher law.
>>11892925In general, grain size. You can get fine-ground table salt that's kosher, but in general, if a recipe asks for kosher salt, it's asking for the larger grains or flakes.
>>11892925three things.1) kosher salt is in flakes, not cubic crystals. this makes it easier to pick up with your fingers, and also makes it stick to food better.2) it has a different density than table salt. If a recipe calls for salt measured by volume then use the same kind of salt the recipe calls for. If you sub normal for kosher the dish will be too salty, and vice-versa. 3) Kosher salt does not contain iodine. Iodine is added to most table salt as a nutritional supplement, but it fucks up certain uses like baking, fermenting, etc. Some dishes specify kosher salt for this reason.
>>11892925Morton is seasalt flattened between rollers, it's lower density than table salt. Diamond is specially crystallized salt which has hollow diamond shape, it's even lower density than morton. Neither has got fuck all to do with koshering, the kosher thing was just marketing. There's also Maldon, Falksalt and Pacific Blue flake salt. In all cases part of your money goes to the kosher certification extortion racket unfortunately. Thanks to the fucking Americans it's impossible to buy any flake salt any more without some of your money going to some fucking Rabbi to pull up to the factory in his Benz to wave a magic stick at it and be off again. America, truly the worst nation.

>>11892925The Kosher mafia charges food and beverage companies to pay for a marking on their packaging which signals to j*ws that it's ok to buy this product. There are two main mafias that do this, recognisable by their individual symbols (K) or (U) but some smaller mafias also exist to facilitate this. You have to pay a fee to their organisation and a rabbi will come and give you the OK to put their letter on your packaging. If you refuse them, when they come to strongarm you into letting you inspect your food plant, they will organise a boycott of your product. It's simply an extra tax.
