We look at living relatives and compare anatomy. For dinosaurs we only have surviving archosaurs (birds and crocodiles) and generally try and get a sort of middle ground there. In rare cases now we actually have fossilized mummies too. I believe we have such a thing for some form of ankylosaur as well as an edmontosaurus.
For others we have feather and skin impressions and we've gotten to the point we can actually tell what color some feathered dinosaurs were. Dinosaurs are a broad group mind you want all the stuff we now about Tyrannosaurs for example isn't very useful for determining the appearance of sauropods for example.

Yeah, that's why mammals can never get quite as big as the dinosaurs were. Even the biggest mammals are strictly quadrupedal. Dinosaurs had fenestrated bones where pockets of air from their respiratory system would fill, so a dinosaur bone would be lighter than a mammal bone of the same size. Also the tail was around 15% of it's body mass and it's center of mass was around where the knees and pubis are.
