I've noticed this too! I also see cheaper, more sparse shag-like "fur" being used if it's of something with a lot of fur instead of the soft, rich faux fur that was more common in the 90s and 2000s. I guess companies have realized that when it comes to toys of characters and fandom things, people will buy it whether the fabric is high quality.

As for your request, I did some searching around and see your exact problem with variety. I actually have the Harry Potter plush for Fawkes (the phoenix), and it's soft, but not the softest it could be. It does has wire in the legs and neck that allow for limited posing if that interests you. Fortunately, I was able to find several phoenix plush that aren't affiliated with a franchise. This was fun to look into because I love mythology, and phoenixes happen to be among my favorite creatures.

The Terriermin in the bottom right us the official life sized one and its probably the best. I really dont know how to review plushies very well though, but it's got the most accurate size and feels the best. It might be hard to find one now though because it was ap bandai exclusive and kind if expensive.
The one on the top left is the fuwa fuwa cushion and it's made to feel really huggable and squeezable. Pretty sure it's still for sale on some retailers like HLJ.

The one on the top right is a big ufo prize catcher one and its OK but not really the best. If it came out after the life sized one I wouldn't have bought it. The rest are from the I Love Terriermon line from UFO prize catchers and were really fun to collect but aren't life sized or close to life sized. They have a slight pastel color scheme which is nice. They did I love Tailmon and Patamon too. They might be a big more expensive now though and not as fun to collect.
