I must be daft but I just don't get step 7. I'm new at this, and couldn't find a video explaining this particular model. Can anyone explain this to me ?

Looks more like a squash fold, if that makes more sense than "double rabbit ear".
From what it looks like, bring the tail up 90° so its perpindicular to the model in a T shape. Then squish it down. Make the valley and mountain folds symmetrical along both sides as indicated, and flatten it to make it look like step 8.
Best I can do without paper on hand
