I haven't heard of the cab mounted gas tank constituting any particular safety hazard--Ford had them on all their pickups from the beginning--Model As had them in the cowl. Unless the truck fell off the Grand Canyon or something it's not likely to be in an impact situation where the gas tank would rupture. If you got into a collision hard enough to rupture it, you would have already died from the impact forces so your body being charbroiled by exploding gasoline would be merely incidental.
The major problem I can see is if you have a leaky tank, you could get sick from the fumes and it there is a source of ignition then it could be very bad. Most likely the leak would be from the sending unit gasket. It's all about proper maintenance, if you smell something check it out and repair it.

I doubt it's a problem. Remember that Ford had cab-mounted tanks for 25 years (1948-73) and at a time when people smoked at a much higher rate than today, and I've never heard any stories of the things blowing up. As long as the tank is in good shape (no visible wetness or smell) and all your connections and sender gasket are good you'll be just fine.

Then again only 22 deaths were confirmed from exploding Pintos. And putting the Mustang tank in my 1970 F-100 was really helpful because of the additional 5 gallons it holds. The 351 engine is thirsty and with the original tank I'd be running out of gas constantly.
As far as the safety aspect of an in-cab tank goes, consider the 73-87 Chevy trucks. Those trucks had side saddle tanks that were located on the outside of the frame rail just behind the the bedside and cab sheetmetal. There was a massive class action lawsuit over the safety hazard this design represented. In reality there were only 155 fatalities attributed to fires in side impact collisions out of the millions of those trucks that GM built--and not all of those were a direct result of a ruptured fuel tank. That's a minuscule percentage of the number of those trucks that were and are on the road. The liklihood of a fire was so remote that Dateline NBC actually had to rig one to get it to explode for their TV segment--and consequently got their butts in hot water over it. One would expect the passenger compartment to be about the safest place to be in a vehicle in the event of a collision. If you're worried about a fire, where else would you want it

There's no such thing as a 100% safe gas tank location on a vehicle.
It may well be possible that lighting a cigarette could cause the tank to blow if it's leaking fumes. Inside a truck cab it could spread quickly from igniting the carpet and being in an enclosed space you're likely to suffocate from smoke or be unable to escape in time. Although I'm sure you'd smell gasoline if that was going to happen.
If you were in an accident severe enough to rupture the tank, you would probably die anway.

I'm fairly sure they moved the tanks to the bed in the 70s to get more room in the cab, not because it was less safe. The infamous saddle mounted tanks on 73-87 GM pickups were suspected of being unsafe by some of the engineering department but marketing were adamant about fulfilling their promise to customers of 40 gallon capacity, which wasn't possible if they'd continued to have the tank in the cab.
