These are built as cartridge guns rather than actual conversion of percussion revolvers. It uses the 1871/72 frame with the 1851 barrel assembly.

Here’s a photo alongside my 1851 Navy to show the differences in dimensions. Most noticeably, the cylinder is larger in diameter.

I had one with 7.5" barrel. I didn't enjoy shooting it with factory level I loads, level II were painful.. the most fun I had was using trail boss to replicate original black powder loads, it was a fun handcannon then. I also worked up a few cartridges with some resized 520gr lead cast bullets and only threw them softly with trail boss.. those were fun too.

I'm surprised you've heard anything negative about an Uberti single action. The action is smooth and the trigger break is crisp. There's not a great deal to improve upon. I could see complaints if it were a brass-framed Pietta with a conversion cylinder.

I absolutely adore longer barrels on pretty much all handguns. I love the look and I love the slightly muzzle-heavy balance when shooting.
I'd really like to see the 1873 Cattleman from Taylor's that has the 7.5" octagonal barrel, it's hard to find good images of online but I bet it's awesome in a quirky way.

I recall EMF made a line they called "Alchemista" which paired the 1860 grip frame, trigger guard and hammer to the SAA frame. The Alchemista III also had an octagonal barrel but I'm not certain if the 7.5" model was available in a non-engraved form.

As for long barrel octagons - the 1851's and 1858 conversion scratch that itch for me!

If you're going to carry black powder, get a Remington 1858 revolver. You can carry all six chambers primed and capped, because there is a notch between each of the nipples where you can rest the hammer. If you do carry a colt instead, make sure that it is steel framed.
