Short answer is that it's too expensive.

Long answer was that with the time and money needed to make an FG-42 you could make multiple MG-42s that had better range and accuracy.

It was actually somewhat complex to machine, given some of the close tolerances (due to wanting to makes sure the rifle was less heavy), and made heavy use of chrome-nickel steel, a material in high demand and in low supply.
It was also only intended for paratroopers, not general infantry, meaning they needed to make far less.

Compare to the Sturmgewehr, which was intended for infantry, and by 1944, had been designed explicitly around the concept of using only good steel for critical components (the barrel, trunnion, bolt, etc, etc), and then using kind of garbage steel for the rest of the gun.
The Stg44 was made much cheaper that way, and faster to make, but it also came at a cost of weight and poor durability, having a rather short expected lifespan (the magazines also didn't last too long).

In fact, the first toolroom prototype for the M60 was an FG42 mated to an MG42 topcover and beltfeed, fitted on the side.
There was also some matter of the FG42 being made for a very particular niche of the era.

It wasn't necessarily well executed, but conceptually it's quite good, and if you had a brand new M60 that hadn't been worn down (in an admittedly relatively short period of time), it wasn't bad, certainly leagues ahead of the BAR or whatever goofy shit they desperately did to try to make the M14 a squad automatic weapon.

The much later and modernized M60E6 is a number of huge steps forward, and is actually quite good by modern GPMG standards.
