Because he had the space stone. He can control space. Meaning dispelling the portals is well within his means. Also with the reality gem he could reattach limbs.

The only way for him to be able to do this would be when he's incapacitated, but in order for that to happen, he needs to be lending his strength to holding him down.

I think it's the same answer for all these "what if" scenarios. We can assume he looked at that possibility and saw it wouldn't work. We don't know specifically why it wouldn't work just that apparently it wouldn't. The way it played out in the movie was the "only way"

Well he only saw one reality in which they won so he tried to steer them down that path. Pretty much everything he did was to try and reach that outcome including giving up the time stone. Clearly it didn't involve cutting Thanos hand off with a portal.

I think Strange knew Thanos HAD to win but it had to be very close to make Thanos worry on the next attempt they make. That's why he calmly hands over the stone, because Peter Quill has done his part freeing him.
Thanos is so strong you can't beat him in a straight fight, and the infinity gauntlet takes him to a whole other level, but Thanos' one weakness is his mind. He's not all-knowing nor all-seeing, so making him think he's won means that he will be more passive.
Watch as the big reveal is Strange explaining step by step what he did to push every event after into perfect alignment to fix everything.
Maybe the snap happening, causing Antman to be stuck in a subatomic space is good because he's alone now and has to figure it all out for himself the true technique of it, which in turn they are able to exploit to travel through space/time to save Tony and the others. (Maybe Hank Pym would have been too reluctant to help)
I dunno. But I think saving Tony Stark was the most important move of all.

Like, yes, the fight contains a million little problems, most notable being Star-Lord probably. And no, Infinity War and the MCU as a whole are not perfect, with much of it not even being good. But the film explicitly shows you that the eventuality you, me and all of us saw was the only one Strange saw with any chance of victory, with the last stage of it (or the ENDGAME, if you will) determining the overall result. This is not a plot hole

Thanos has the goddamn Reality Stone. Any harm into his body becomes nothing.

We don't even know that a portal would close around Thanos's arm. His durability is absolutely ridiculous, he handles infinity stones that fuck other people up on physical contact. Tony drew a single drop of blood from him, and his only other significant injury was from Stormbreaker, which is outright stated to be a god-killing weapon. Plus, Thanos might be able to use the Space stone or something to negate the portal's effects. Power over space means negating teleportation and movement across space just as much as it means controlling teleportation/movement.

I'm going to be curious to see how Endgame fills in this piece. IW made it very obvious that Strange's keikaku hinges on Tony surviving past Titan so there must be something he and ONLY he can do to give them the victory in the end.
