Actually, the function of their powers would only dictate the durability of their projected forms. The core gem's durability has nothing to do with that, much like any emitting device's durability has nothing to do with the signal it emits.

They're different factors. Not to say their gems are as fragile as normal jewels, though much like normal jewels it's likely that the durability is dependent on the individual. As for surviving being under great pressure in the center of a star, if the pressure was uniform (as it is in the center of a star) then of course it can't break the gem, compression force=/=impact force.
End of the day though it's a cartoon so it's best not to take these things too seriously.

Regardless the one thing that remains somewhat consistent is that their forms are highly defenseless against puncture damage, something a modern bullet does more than well in. Pearls hologram thing just stabbed her with a spear and she poofed completely, maybe destroying the gem itself is a little difficult but to destroy the form it takes on is almost always easy as shit assuming you have proper firepower to do it with.

Because Quartz is a category of gem suited to be shock troops. Amethysts seem to be grunts and brutes while Jaspers were made one Earth because the materials needed to make them were abundant there but are of a superior status. Rose quartz are probably also used defensive utility units due to the fact pd disguised herself as one so we know they exist and have can have special powers.

The superweapon one of the gems makes for shattering enemies, that was considered basically a war crime, is a shittier, arm mounted version of a jackhammer.
Humanity would lose in one to one or ship to ship combat, but army versus army is completely in humanities favor.

Ballistic and blunt weapons are undoubtedly lethal to the gems, but if you're shooting at them with bullets, the tricky part is accuracy, as only their crystal cores are vulnerable to it. Hammers and swords should deal with them well enough, though.
Particle weapons, on the other hand, gems would have no issue shrugging off (unless they were specifically designed to destabilize their hard-light matrices, like what Jasper used at one point to poof Garnet, but this is a special case).

Also, SU may be a shit show with shit consistency, but I still find the gems as a concept for an advanced alien species intriguing. I wish more people would pay attention to the cool and interesting parts of a show instead of throwing it in the same garbage bin as the shitty parts.

I blame Sugar's staff and her ability to manage them. It's clear that the lion's share of the world building and lore of the show comes from Sugar herself, and much of it from things she outlined early in the design process. But her skills as a manager of people seem a bit weaker, given how much she puts up with in terms of the lack of consistency in character models. Look at this shot from Three Gems and a baby, storyboarded by Lamar Abrams and Katie Mitroff. This shit is unacceptable. Or at least it should be, if it wasn't for the fact that Sugar accepted it. I don't know if she thinks it's okay, or is too afraid of confrontation to actually criticize someone's work, but my gut says it's the second one, given how she comes across in interviews.

Its dumb but similar to Mr. Fantastic, his body is a perpetual energy machine, making its own energy by existing. He eats mostly because he likes food and its one of the few senses that hasn't been dulled since his transformation. Without the wish magic that Sue/Richard used to "just work" it, an older story showed he gained energy from the cosmic rays embedded in his body but they have a near infinite half life so he isn't running out of juice soon.

Fictional metal true but its supposed to be hyper dense meteoric ore that has super fine molecular edges that allow it to bond or cut most things (sans reinforced/Antarctic vibranium and hybrid alloys of Adamantium). It doesn't replace bones but bonds with them on a molecular level. Its been hit and miss but sometimes Wolverine's body regenerates the metal since its now part of his molecular structure and other times he doesn't so when the adamantium is broken/ripped out, then he just grows normal bone to replace it. Wolvie also doesn't die from lack of Red Blood Cells because of his body being able to go into cellular stasis like a reptile when in hyper critical condition and his body producing cells at an incredible rate. Funny enough its also why he eats and drinks so much for a manlet. His body treats the alcohol as sugar (carbs) and the protein he gains from food helps kick-start his bullshit metabolism/healing factor.

To be fair a lot of Marvel's heroes run 10%-20 real science and the rest is utter bullshit. You may not like it but they do at least try to explain it in the comics.
