Are tacos a waste of steak? Heard two people having this discussion.

Texmex anon here. Tacos use non steak cuts. Yes, it is possible to put steak in a tortilla, but most al carbon, a la plancha o al pastor o picadillo etc. tacos use non-steak cuts to the fullest.

I work at a taquiera and we use flank steak. It's a hard call, since incidentally steak taco's are our most popular menu item. But the steak costs so damn much, we make maybe sub 15 percent profit. Though I should say that a taco on it's own (onions cilantro radish lime salt) is probably the most exact paring to go with a nice piece of steak. The shell kind of get's in the way though, corn is minimal enough but flour is probably a step too far. All other additions though remain, to me atleast to be A1 tier. No avocado bitch, no verde, and for the love of god no baja sauce. Please just enjoy the work it takes us to make you this excellent taco.

Tacos are great for fatty organ meats. I only eat brain and tongue tacos, everything else just seems better placed as an entree with some sides.
