Is it tender? What cut of beef did you use, and how long did you cook it?
I cut the strips thin across the grain and simmer for a long time, because usually some lean, tough meat goes in.
My parents always use pic related, because it self regulates and you can leave the kitchen and do other stuff.

Probably an acceptable meat to use, but the chunks are too big for stroganoff. Had you cut each chunk into 4 - 6 strips you would have gotten a better result. Its probably some shitty meat like top round, and needs a minimum cook time of 90 minutes, 2 hours is better.
Next time you can buy a more tender beef, or just use the cheap stuff but cook it longer and cut to the proper size and shape. If that was your first time making it, trust me it will get better.
Its a pretty tasty, solid meal that most people will like, its not too difficult or expensive. We made it once or twice a month.
