2) unless the person is actively working to consume enough protein, many/most vegans simply do not consume a lot of protein on the regular. athletes who do veganism are few and far between, but they, like all pro athletes, watch their diet very strictly.
3) carbs, especially simple carbs make you gain fat unless you are tremendously active, in which case they get burned off as fuel very quickly. most adults are not active to that level, so it's easy to get some extra weight, even if you're just skinny-fat.

That's a misconception. The keto diet was the primary way to treat diabetes before insulin was available. Do you have a source for that? Even if that's true, then it's still just an issue of overeating. When people say their genetics are making them fat, they're usually already overweight and saying they're gaining weight while eating nothing but a small salad every day or something like that.

I know this is true though, some people feel satisfied with more starchy food in their diet while others need more protein. I hope genetic testing gets cheaper so we can learn exactly what each individual body does best with.

But being overweight is still just from eating too much. A lot of people mindlessly snack while watching TV, drink high calorie sodas all day, heavily underestimate how many calories they're really consuming, and eat until stuffed instead of just not hungry. So many people start freaking out if they've gone 6~ hours without food and saying they're going to pass out from low blood sugar when they just can't handle being a little hungry.

Well, if you don't train your muscles, they will atrophy regardless of diet. I'm vegan for over 10 years with lean muscle, while my sister is omnivore who never exercises and her arms are a flabby mess, can't even do 10 push ups.
